A Visit to Omnipollo: Pilsner, Pastry, and Everything In Between

There are breweries that make great beer, and then there are breweries that change the way you think about beer. For us, Omnipollo has always been firmly in the second camp. We’ve been lucky enough to work with them for over six years now, but visiting them in Stockholm recently reminded us just how special they are. Omnipollo don’t just brew beers, they build worlds. Their taproom feels like an art gallery as much as a brewery, and every beer tells a story: bold, colourful, a little bit wild, but always brewed with absolute precision.






We began our trip with a visit to Omnipollo Flora, where we started with incredible burgers and sides that set the tone for the day, with a sampling of Amy, their French Oak Pilsner. Housed in an old flower shop in the middle of a park, Flora is Omnipollo's summer venue. Serving up iconic soft serves, ice creams, amongst an array of great beers.
After lunch, we were lucky enough to get a personal tour of the city with Robert and Mikkael, sampling a few of the local bars and a quick boat journey to the archipelagos, before arriving at Omnipollo Hatt, which was the perfect spot for pizzas and the first chance to try their famous Soft Serve beer pours with Pleroma.
At Omnipollo Hatt, Henok was kind enough to give us a sneak peek behind the curtain — and it perfectly summed up Omnipollo’s constant drive to innovate. From a new Verdant collaboration to a barrel-aged chocolate & coconut imperial stout brewed using his so-called “Spice Gun” (the result was pure liquid Bounty), every idea pushes beer forward. And then came God’s Soft Serve: a canned piña colada-inspired beer crowned with a thick, fluffy head that looks and drinks like whipped cream. It’s playful, ambitious, and utterly unique. In short, it’s Omnipollo.
The next day, we headed to the Church to visit co-founder and head designer Karl Grandin’s studio at the top of the Church, where we saw firsthand the design work that underpins Omnipollo’s identity. We also had a tasting and tour with Simone, going through a variety of styles, learning the stories behind each beer, and enjoying the creativity of the team up close.
One of the most striking things about Omnipollo is how their venues feel like extensions of their brewing philosophy. Each space — Flora, Hatt, and The Church — has its own identity, yet together they paint a complete picture of what Omnipollo is all about: creativity, playfulness, and a deep respect for flavour. Whether it’s the lively energy of Hatt, the more refined feel of Flora, or the awe-inspiring Church, every visit is a reminder that beer can be so much more than what’s in the glass, it’s an experience.






What really struck us is the balance in their lineup. On one side, you’ve got the boundary-pushers — decadent stouts, playful IPAs, fruited sours, all beers that make you stop mid-sip and think “wait, is this really beer?”
On the other side, you’ve got the classics executed to perfection. And nowhere is that clearer than in their Pilsner. For all the wild creations Omnipollo is known for, their Pilsner might just be the most impressive of them all. It’s a beer that proves restraint can be every bit as exciting as experimentation. Crisp, clean, and beautifully balanced, Omnipollo Pilsner is a masterclass in subtlety, the kind of beer that rewards both careful appreciation and carefree session drinking.
It’s also a statement. In a portfolio filled with stouts layered with chocolate and pecans, IPAs brimming with hops, and soft-serve sours topped like desserts, the Pilsner reminds you that Omnipollo have got the foundations of classic brewing nailed too. It’s the beer we kept going back to during our visit, and one that underlines why Omnipollo sits at the very top of modern brewing.




Omnipollo also thrives on collaboration. They’ve worked with some of the best breweries in the world across every style: Other Half, Monkish, and Trillium on IPAs; Angry Chair and Horus on stouts; Birrificio Italiano and Budvar on lagers. With each collaboration, they’re honing their craft, learning from the very best, and pushing Omnipollo to be at the forefront of every style.
One of the joys of working with Omnipollo is the sheer pace of their creativity. Every time a new beer list drops, there’s a buzz of excitement on our end. Through our pre-order system, we’re able to bring every release to the UK within a two-month window — meaning drinkers here can share in that same thrill of discovery. Whether it’s a new spin on a classic style or something completely unexpected, there’s always something to look forward to.






The most exciting thing? Omnipollo isn’t slowing down. New projects, collaborations, and ideas are always bubbling away, and if history is anything to go by, the best is still to come. What really stood out during our visit was how humble and welcoming the whole team were. From Robert and Mikkael showing us around Stockholm, to Karl Grandin opening the doors to his design studio above The Church, we felt like part of the family. And then there was Simone, guiding us through a thoughtful tasting across styles that showed just how wide Omnipollo’s range stretches. It’s rare to find a brewery with this much creativity and ambition that remains so approachable.
We left Stockholm inspired, refreshed, and maybe just a little obsessed with that Pilsner. After all these years, Omnipollo still surprise us and we’re proud to share that with our customers here in the UK.
